For the first time in... well, ever, I actually made the kids dinner at home on a night when Keith is out gaming. As opposed to ordering pizza or going and hanging out at the McDonald's playland, which is what we usually do on his twice-monthly boardgaming nights. A double whammy conspired to keep us at home this evening; first, it's cold and raining, so the playland was out anyway. Second, we just made a big trip to the grocery store, and I'm always disinclined to spend money at a restaurant when I just dropped $75 on groceries.

Because Keith wasn't home, and because I've been meaning to do this for awhile anyway, I opted for homemade macaroni and cheese, on the grounds that it's something I know the kids like -- well, in general; I've never actually made it from scratch before -- but is nominally good for them, because, y'know, it's made from scratch. Anything you actually make from actual ingredients, rather than dumping it out from a can or a box, is officially good for you. I don't care what the nutritional information is. It's good for you. End of story.

I had no idea how easy this stuff is to make. I had some idea that it was a multi-hour process involving heavy labor, but actually you just boil macaroni noodles, make a cheese sauce (which itself is just a basic white sauce with cheese stirred in), combine the two, throw in some Parmesan maybe, sprinkle breadcrumbs on top, and bake.

This was a Big Hit with the kids. We also had corn 'n' peas and applesauce, so it was pretty much a Trifecta of Yum, as far as they were concerned.

Am now going to descend into the depths of Box Hell for awhile, in a futile attempt to pack all our stuff before we close on the new place. If I'm not back in half an hour... just wait longer.
